Dashi stock
Basic Dashi Stock- Add half teaspoon dashi stock granules to 1 cup(250 ml) hot water.
The granules contain salt,so taste before adding the full amount of salt called in the recipes.
Cold Soba Dashi Broth-1 cup basic dashi stock, tablespoons japanese soy sauce.1/4 cup(60 ml) mirin.
Place all ingredients in a saucepan,bring just to a boil over medium heat and remove from heat immediatly.
Serve with cold soba noodles.
Keep refrigerate up to 4 days.
Sauces and Batters
Sukiyaki Sauce
6 tablespoons japanese soy sauce
5 tablespoons mirin
5 tablespoon sake
5-6 tablespoons sugar
1 1/2 cups(375ml) chiken stock or basic dashi stock
Combine all the ingrenients in a pan and bring to a boil,stiring to disolve the sugar,once the sugar it disolved,remove from heat and pour the sauce into a bowl.
Sesame Dipping Sauce ( Goma Tare )
5 tablespoons white sesame seeds
1 tablespoon miso
2 tablespoons mirin
1 tablespoon tamari or dark soy sauce
1 tablespoon japanese soy sauce
1 tablespoon freshly squeeezed lemon juice or rice vinegar
half tablespoon sugar
half teaspoon grated ginger
1/4 teaspoon ground red pepper
1/4 cup(85 ml) water.
Dry roast the sesame seeds untill light golden brown,do not burn the seeds or it will taste bitter.
place the sesame seeds and all ingredients in a blender ,make a sauce.it best to be prepare one day ahead for the flavours to blend.
keep refrigerate 2-3 days.
Sweet vinegar -Amazu
1 cup(250 ml) water
1/2 cup(125 ml) rice vinegar
1/3 cup(60 g) sugar
1 teaspoon salt
Bring the water and vinegar to a boil in a saucepan,then add the remaining ingredients and stir to dissolve the sugar and salt.Remove form heat and seat aside to cool.Use for dipping and pickling vegetables.keep refrigarate for up to 10 days.
Chiken Yakitori Glaze - Tori Tare
1/2 cup(125ml) chicken stock or half teasppon chicken stock powder dissolved in 1/2 cup(125 ml) water
1/3 cup(85 ml) sake
1/2 cup(125 ml) mirin
1/2 cup (125ml) japanese soy sauce
2 tablespoons sugar.
Place all ingredients into a small saucepan and bring to a boil,reduce heat and simmer for 20 minutes or untill the sauce it reduce to half.
The sauce keeps refrigerated for up to 1 month.
Use thsi sauce for brusing when grilling chicken yakitori.
Teriyaki sauce
1 cup(250ml) japanese soy sauce
1 cup sake
1 1/2 cups(375 ml) mirin
5-6 tablesppons sugar
Combine all the ingredients in a saucepan and bring to a boil over medium heat,simmer on medium-low heat stirring constatly untill the sauce is reduced to less than half the original volume.
keep refrigerating for up to 6 months.
Japanese Mayonnaise- Tamago no moto
2 egg yolks
half teaspoon lemon juice
1/2 cup(125ml) salad oil
1 tablespoon white miso
Pinch of salt and white pepper
Pinch of grated yuzu,lime or lemon peel(optional).
Beat the egg yolks and add the lemon juice ina abowl using a wooden spoon.Continue beating,adding the salad oil a few drops at a time untill the mixture begins to emulsify,ad the miso,salt grated pper and grated peel if using.
Tempura batter - Tempura Ko
1 egg yolk
1 cup(250 ml) ice water
1 cup(150 gr ) cornstarch ,shifted
Put the egg yolk in a bowl and the mix in the water gradually.
Add the cornstarch all in once and stir briefly.
Tempura batter should be thin and lumpy,it best made just before cooking.

-1kg faina(folosesc KAMELIA)
-50 gr drojdie proaspata sau 15 gr uscata
-250 gr zahar
-500ml lapte cu 3,5 sau 3,6 grasime +2-3 linguri
-200 gr grasime(100 gr margarina ptr prajituri+100ml ulei)
-5 galbenuse
-1 lingurita rasa de sare
-arome:coaja de portocala,lamaie,rom, vanilie,ce va place
UMPLUTURA
-nuca,rahat,mac,stafide,fructe confiate,dupa preferinta
MDP:
Se incalzeste laptele cu zaharul si aromele,pana cand se topeste zaharul.
Se da la racit.Intr-un vas mic se pune drojdia si 4-5 linguri din laptele gata indulcit,se amesteca bine ,iar deasupra se pun in ploaie 2 linguri de faina.se pune maiaua la crescut,pana cand crapa faina deasupra.
Intre timp se cerne faina intr-un vas mai mare,de doua ori,ca sa fie mai afanata.Galbenusele se freaca f bine cu sarea.se face in faina o adancitura,se pune maiaua crescuta,gelbenusele si laptele,care trebuie sa fie caldut,nu fierbinte ,dupa care se incepe a framanta pana cand se amesteca ingredientele.Daca este putin moale,se lipeste de maini,nu va ingrijorati,incepeti sa framantati ajutandu-va de garasime,la fel calduta.Turnati cate putin in maini,framantati bine pana se incorporeaza,iar grasime,iar framantat,pana cand nu mai aveti grasime,dureaza cam jumatate de ora,dar merita efortul.lasati la crescut ,la loc cald si ferit de curent,o ora.
Intre timp faceti umplutura cu ce va place,nuca+cacao+albus+zahar+arome
rahat,mac sau satfide.
Pregatiti tavile cu hartie de copt.Dupa ce a crescut,scoateti aluatul pe masa de lucru,impartiti-l in 2(eu am tavile mici si fac si un cozonacel trandafir)Intindeti foaia cu dosul palmei,puneti umplutura si rulati.Asezati in tava si lasati din nou sa creasca pana la baza de sus a tavii.Ungeti cu un ou batut cu o lingura de lapte si dati la cuptorul preincalzit,unde ii coaceti la 170-180 de grade timp de 45 minute.

Linte galbena(sau de care vreti) o cana,la inmuiat citeva ore,se pune la fiert si se schimba apa in care fierbe de 3 ori,eu pun si putina Asfaetida(un praf impotriva pirturilor,hihihi).

Sosul : 1 cutie de rosii,2 foi mari de dafin,1 lingurita vegeta,si un pahar de vin rosu,se fierb la foc mediu cam 15 minute,o bunatateeee.

Kimchi(300gr)
o juma de ceapa taiata solzi
2-3 fire de ceapa verde,taiata bucatele de 1 cm

1 carnat afumat(extra)
1 lingura de zahar
1 lingura de pasta de chilii
1 lingura de praf de chilii

mod de preparare:
se pune kimuchii-ul gata taiat in oala,cu tot cu sucul lasat,ceapa verde,ceapa alba,morcovul,carnatul taiat rondele,carnea(eu am dat-o inainte separat o data in fiert,dupa care am spalat-o de spuma lasata si apoi am folosit-o),toate ingredientele,inafara de uleiul de susan,se acopera cu apa cu un deget peste intreaga compozitie,se pune capul si se da la fiert.
dupa ce incep toate legumele sa fiarba,cca 30 de min,se adauga uleiul de susan,daca ai tofu,il poti taia felii,si il pui si pe el deasupra peste supa,fara sa mai amesteci si mai lasi 10-15 min la fiert la foc mediu!

Blat 3 oua,9 linguri zahar,9 linguri ulei,9 linguri faina si putin praf de copt stins cu otet(jumatate de lingurita). esenta de vanilie sau ce vreti sa puneti.
Se bat albusurile spuma,se adauga zaharul ,se bate pina se tin bine pe tel,si dupa aia se adauga galbenusurile,uleiul putin cite putin si faina.
Se tapeteaza tava,eu am o tava care nu este inalta,se adauga compozitia si la cuptor la 180 de grade cam 20 de min,se face proba cu scobitoarea,se scoate din cuptor,se pudreaza si se taie dupa ce se mai raceste.

se amesteca toate ingrenientele si se adauga apa putin cite putin pina se formeaza o pasta,se ung miinile cu ulei,se formeaza chiftelutele si se prajesc,se scot pe servetel de hirtie.

in uleiul ramas se prajeste ceapa,usturoiul,frunzele de curry,ardeiul uscat si semintele de mustar,se amesteca incontinuu,cind semintele de mustar incep sa sara se adauga pasta de iaurt si se amesteca bine,se adauga apa si chiftelutele prajite,se gusta de sare si gata,pofta buna!
se serveste cu orez fiert sau pinica naan.

Ingrediente
1-2 bucati piept de pui(sau carne de porc)
30 g unt,
1 lingura mustar de Dijon,
2 linguri smantana grasa,
sare, piper,
Mod de preparare
Pieptul de pui se taie in cubulete. Se incinge untul si se adauga cubuletele de pui. Se lasa la prajit pana se rumenesc. Se adauga apoi mustarul,se amesteca continuu 1 minut apoi se adauga smantana. Se adauga sare si piper. Se lasa cateva mainute(maxim 5). Se ia de pe foc. Se serveste cu diverse legume sau cu cartofii fierti, simplii.

Ingredients
Lean pork (remove the skin and fat), cut into 3/4-inch cubes – 2 lbs
Onions, chopped – 2 medium
Tomato, chopped – 1 medium
Garlic paste – 1 tbsp
Ginger paste – 1 tsp
Green Chillies – 4-5
Curry Leaves – 2 sprigs
Vinegar – 2 tsp
Soy Sauce – 2 tsp
Turmeric Powder – 1 tsp
Red Chilly Powder – 1 tbsp
Pepper Powder – 1 tbsp
Coriander Powder – 2 tbsp
Garam Masala Powder – 1 tbsp
Cooking oil – 5 tbsp
Salt – As required
Cut the pork into bite sized pieces and clean thoroughly.
Marinate pork in 2 tsp vinegar, 2 tsp soy sauce, 1 tsp turmeric, 1 tsp pepper and salt for 30 minutes.
Pressure cook the marinated pork along with water. Add enough water so as to cover the pork.
Pressure cook it for 2-3 whistles or till the pork is cooked.
Heat oil in a pan. Add onions and saute till translucent.
Add green chillies, ginger and garlic paste and fry for a minute.
Add curry leaves and cilantro and stir fry till the onions begin to brown.
Next, add 2 tbsp coriander powder, 1 tbsp red chilly powder, 1 tbsp ground garam masala powder, 1 tsp pepper and fry for a minute.
Add tomatoes along with salt and stir fry till the oil separates from the gravy.
Now add the cooked pork along with the remaining water from the cooker and mix well till it is coated with the gravy.
Cover and cook on medium flame for 15 mintues, stirring occassionally.

- 1 1/3 oz. boiled bamboo shoot, chopped

- 1 tsp ginger juice
- 2 tsp oyster sauce

Sift flour and baking powder together in a large bowl. Add sugar in the flour. Pour warm milk in the flour gradually. Knead the dough until it becomes as soft as ear lobes. Divide the dough into 8 balls. Set aside. Chop onion and boiled bamboo shoot. Put ground pork, onion, bamboo shoot in a large bowl. Add ginger juice, soy sauce, oyster sauce, sugar, and sesame oil in the bowl. Mix well until the meat becomes sticky. Take a ball of dough and flatten by hands. Put a spoonful of meat filling in the center of the dough and wrap it by gathering the dough to the top. Repeat the process to make more manju. Put each manju on a small square sheet of cooking paper. Preheat a steamer on high heat until starts steaming. Place manju in the steamer. Steam about 15 minutes on high heat.

sasami no minoyaki
SASAMI NO MINOYAKI
carne de pui 200g ( fara grasime) 2 lingurite osake, 1 lingurita shioiu,putina sare,2-3 cartofi, 1 ou, katakuriko, ulei pt prajit.
MOD DE PREPARARE
Carnea de pui se taie cam 3-4 cm in lung, apoi se da cu sare si se pune osake si shioiu. Se curata cartofi de coaja si se taie ca la cartofi prajiti mai subtiri cam 2-3 cm apoi se spala, se ia un servet de bucatarie si se usuc. Se ia cartofi si se amesteca cu puiul si oul batut. apoi luati un manunchi din cantitate si se prajeste in mult ulei( ca la tempura , koroke etc)

am facut carnea cu pasta de harissa ,ceapa,condimente ,suc de rosii,sos worcester,sare ,piper.
am pus jos chifla,frunze de rucola,rosii feliute,ardei iute murat,salata coleslaw cu telina si carnea.
A fost o bunatate.

Keema matar(carne tocata cu mazare stil indian)
Ingreniente: ulei,2 cepe taiate solzi,3 catei de usturoi mari ,ginger 2,5 cm taiat maruntel,4 cuisoare,4 boabe de piper,2 frunze de dafin, 1,5 cm baton de scortisoara,1 cardamon negru,1 lingurita de seminte de coriandru macinat,1 lingurita cumin macinat, O jumatate de lingurita garam masala,o jumatate lingurita chilii pudra,o jumatate lingurita turmeric,sare
500 grame carne tocata de miel
o cutie de rosii (eu am facut fara) si apa cam o cana.
250 grame de mazare(o conserva).
Se incinge uleiul,se pune ceapa usturoiul si gingerul ,se adauga toate condimentele si se prajeste pina ce ceapa capata culoare se adauga carnea si se mai prajeste 2 minute.
se adauga rosiile si apa si se acopera cu capac si se fierbe cam 20 de minute pina scade apa,se amesteca din cind in cind.
dupa 20 de minute se ia capacul si se lasa sa scada apa definit,se adauga mazarea deja fiarta la sfirsit,se mai amesteca putin si e gata.se pune pe deasupra putina garam masala si corindru tocat.
se serveste cu orez,piinica nan,chapatas,raita ce aveti prin casa.
Jeera rice,Chiken curry masala
Jeera rice : se fierbe 1 cup de orez,se da deoparte,separat in tigaie se caleste o ceapa mare si la sfirsit se adauga seminte chimen sa se prajeasca si ele,se adauga orezul,sare,piper.

Am marinat carnea de cu seara : carne de pui(curcan daca vreti) usturoi,ginger,un praf de scortisoara,iaurt vreo 2 linguri,sare ,piper.
Am pus la prajit ,cind a fost cam jumate prajita am adaugat 3 cepe solzi taiate si am calit impreuna(nu trebuie sa fie ulei ff mult) si spre sfirsit am adaugat ardei gras(in cazul meu ca am fost multi la masa am pus 3 ardei grasi colorati diferit) si caliti in continuare pine sa face,am tras de pe foc si am adaugat o mina buna de coriandru tocat.

Potato skins cu cascaval si bacon
Se pun cartofi la cuptor intregi,se coc,se scot si se scobesc inauntru,nu de tot doar asa sa faca o gaura inauntrul lor,se pune in gaura bacon(care eu l-am prajit separat in tigaie) si cascaval ras,si deasupra am pus chives(un fel de ceapa verde dar ff subtirica) si da-ti la cuptor pina se rumenes.
Sint f usor de facut si ff gustosi.

Tagine cu pui si masline

4 chicken thighs, skin attached, or substitute chicken breasts
1 tablespoon extra-virgin olive oil
1 small onion, sliced thin
1 tablespoon grated ginger
2 cloves garlic, chopped
2 tablespoon ras el hanout, store-bought or see recipe here
2 teaspoons finely grated lemon zest
1 tablespoon all-purpose flour
2 cups chicken broth
1/3 cup lemon juice
1 tablespoon honey
1 cup cooked chickpeas
1/3 cup green olives stuffed with almonds
2 cups cooked couscous or rice
Sliced lemon peel and chopped fresh flat leaf parsley for garnish
Rinse off the chicken, pat dry, and season with salt and pepper.
Heat a heavy saucepan over moderately high heat, add the oil and when hot, place the chicken pieces, skin side down, in the skillet and fry for 5 minutes or until browned. Turn the pieces and brown on the other side. Remove the chicken and keep warm. Pour off all but 1 tablespoon of the fat from the skillet.
Add the onion to the pan and saute until it is softened. Add the ginger and garlic and cook for an additional couple of minutes. Stir in the ras el hanout, lemon zest, and flour. Cook for 1 to 2 minutes, stirring constantly to cook the flour. Whisk in the broth, raise the heat, and scrape all the bits and pieces from the bottom of the pan into the sauce. Add the lemon juice and honey.
Reduce the heat, return the chicken pieces to the pan, and simmer, uncovered, stirring occasionally, for 30 to 40 minutes or until the chicken is just done. Add the chickpeas and olives and simmer for 5 minutes. Taste and adjust the seasonings.
To serve, create bed of couscous or rice on a large platter, place the chicken pieces on top, and pour the sauce over the chicken. Garnish with the parsley and lemon peel.

carnea prajita se scoate pe o farfurie,se sterge tigaia de ulei,carnea se pune la loc in tigaie cu usturoiul si sosul rezultat din ingrenientele de mai sus.se prajeste totul la foc mare ,se serveste cu orez si legume .
Mabonasu
350 gr de vinete,morcov 30 gr,ardei gras 60 gr,
vinetele se spala si se feliaza fisii lungi si subtiri.
se caleste morcovul ,se adauga vinetele,si dupa ce sau inmuiat vinetele se adauga ardeiul ,se calesc pina incepe sa miroasa a ardei calit,da-ti la o parte tigaia,adaugati un plic de mabonasu si amestecati bine,si se pune iar pe foc si se da in citeva clocote!

compozitia am facut-o din o cana de soia inmuiata cu condimente,oregano,nucsoara, 6 ciuperci,jumatate de ardei gras,3 cepe,si 3 linguri bulion.
am calit toate astea si am asezat foile de lasagna,un strat de compozitie,unul de beshamel sos,si tot asa pina se termina cu sosul bechamel,a iesit o bunatate,
Haposai
carne de pui 200 gr,creveti 100 gr,ciuperci shitake 5 bucati,morcov 50 gr,teci de fasole 20 gr,vraza bucati 150 gr (4-5 foi ),oua fierte ( 1 bucata de persoana). 1 plic haposai amestecat cu 200 ml apa rece.
se pune ulei in tigaie,carnea se face pe jumatate,si se adauga morcovul,fasolea,shitake,varza.
se ia de pe foc si se adauga plicul de haposai cu apa,se amesteca bine si se repune pe foc mare citeva clocote.
